Brown Butter Mushrooms
The secret: so much butter you have to ask people to leave the room when you’re making them. I cooked a kilo of chestnut mushrooms in approximately 300g butter. Shhh. You can go smaller if you like, but if you like that sort of thing you probably wouldn’t be here.
