Mustard Seed Caviar
The ratio to remember is 3:3:2:1 where 3 is vinegar and water, 2 is mustard seeds, 1 is sugar. Plus a bit of salt. For variations, try different vinegars, treacle or malt syrup instead of sugar, adding a few spices and herbs (fennel, juniper, cumin, bay, thyme, garlic).
