I ate the best tortilla of my LIFE about three years ago in San Sebastián, a tiny, two-table restaurant serving only steak, dressed tomatoes, padron peppers and tortilla. After a number of test runs I realised the main thing is to start small, I settled on a mini 8inch diameter cast iron pan.
